Ingredients for 6 servings:

1 bunch asparagus
2 cups quinoa
4 cups water
punnet cherry tomatoes
16 oz baby bella mushrooms
olive oil
salt/pepper
2 lemons
3 tbsp balsamic or coconut aminos
2 cups frozen peas

hummus:
2 cans chickpeas
2 garlic cloves
1/2 lemon
1/2 tsp salt
1/4 tsp pepper
1 tsp cumin
1 tsp sesame seeds or tahini paste
1 tbsp olive oil
water to thin out to the right consistency
